Instructions
Heat olive oil in a large skillet over medium heat. Add sausage and break it up with a spoon as it browns.
Add onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
Stir in crushed tomatoes, oregano, and basil. Bring to a simmer.
Add diced potatoes. Cover and cook for about 25-30 minutes until potatoes are tender, stirring occasionally.
Season with salt and pepper. Garnish with fresh parsley before serving.
Notes
You can swap in sweet potatoes or add chili flakes for a spicy kick. Delicious with crusty bread!
