  • 1 lb Italian sausage casings removed
  • 1 tbsp olive oil for sautéing
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can crushed tomatoes (15 oz)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 3 medium potatoes peeled and diced
  • to taste salt and pepper
  • fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add sausage and break it up with a spoon as it browns.
  • Add onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
  • Stir in crushed tomatoes, oregano, and basil. Bring to a simmer.
  • Add diced potatoes. Cover and cook for about 25-30 minutes until potatoes are tender, stirring occasionally.
  • Season with salt and pepper. Garnish with fresh parsley before serving.

Notes

You can swap in sweet potatoes or add chili flakes for a spicy kick. Delicious with crusty bread!
