  • 4 boneless skinless chicken breasts or thighs
  • 1.5 lbs baby potatoes halved
  • 1 oz ranch seasoning mix 1 packet
  • 1 cup chicken broth low sodium recommended
  • 1 tbsp minced garlic optional
  • 1 cup cheddar cheese shredded, optional
  • 1/2 cup sour cream for added creaminess
  • chopped parsley for garnish

Instructions
 

  • Place chicken breasts and halved potatoes in the bottom of the slow cooker.
  • Sprinkle ranch seasoning and minced garlic evenly over the chicken and potatoes.
  • Pour chicken broth into the crockpot. Cover and cook on low for 6 hours or until chicken is cooked through and potatoes are tender.
  • In the last 15 minutes, stir in sour cream and cheddar cheese until melted and well combined.
  • Garnish with chopped parsley and serve hot!

Notes

For extra richness, add a splash of heavy cream before serving. This dish pairs perfectly with steamed green beans or a side salad.
