Instructions
In a blender or food processor, combine the cottage cheese, eggs, flour, baking powder, and salt. Blend until smooth.
Heat a non-stick skillet over medium heat and lightly grease it.
Pour a portion of the batter into the skillet, spreading it gently into a round or oval shape.
Cook for about 3-4 minutes on each side until golden brown and set. Repeat with remaining batter.
Notes
These flatbreads are great for meal prep. Keep them in the fridge for up to 3 days or freeze for later use. Reheat in a skillet or toaster!
