Ingredients
  

Flatbread Base

  • 1 cup cottage cheese full-fat or low-fat
  • 2 eggs large
  • 1/3 cup all-purpose flour or use oat flour for gluten-free option
  • 1/2 tsp baking powder
  • 1/4 tsp salt to taste

Instructions
 

  • In a blender or food processor, combine the cottage cheese, eggs, flour, baking powder, and salt. Blend until smooth.
  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour a portion of the batter into the skillet, spreading it gently into a round or oval shape.
  • Cook for about 3-4 minutes on each side until golden brown and set. Repeat with remaining batter.

Notes

These flatbreads are great for meal prep. Keep them in the fridge for up to 3 days or freeze for later use. Reheat in a skillet or toaster!
