Rinse and dry strawberries. Slice off stems so they stand upright. Carefully cut an 'X' in the top of each strawberry, slicing almost to the base but not all the way through.
In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
Transfer cheesecake filling to a piping bag or a zip-top bag with the corner snipped off.
Pipe filling into the center of each prepared strawberry.
Sprinkle the tops with graham cracker crumbs for that classic cheesecake flavor.
