Description
A creamy and hearty soup packed with potatoes, cheese, bacon, and green onions.
Ingredients
- 4 large russet potatoes, peeled and diced
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 cups chicken broth
- 1/2 cup chopped green onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
Instructions
- In a large pot, melt butter over medium heat.
- Add flour and stir until smooth.
- Slowly whisk in milk until thickened.
- Pour in chicken broth and bring to a simmer.
- Add diced potatoes and cook until tender.
- Reduce heat and stir in sour cream.
- Mix in half of the bacon and cheese.
- Season with salt and pepper.
- Serve hot topped with remaining bacon, cheese, and green onions.
Notes
- For thicker soup, mash some potatoes before adding sour cream.
- Substitute Greek yogurt for sour cream if desired.
- Store leftovers in an airtight container in the fridge for up to 3 days.
