Description

A creamy and hearty soup packed with potatoes, cheese, bacon, and green onions.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 cups chicken broth
  • 1/2 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk


Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add flour and stir until smooth.
  3. Slowly whisk in milk until thickened.
  4. Pour in chicken broth and bring to a simmer.
  5. Add diced potatoes and cook until tender.
  6. Reduce heat and stir in sour cream.
  7. Mix in half of the bacon and cheese.
  8. Season with salt and pepper.
  9. Serve hot topped with remaining bacon, cheese, and green onions.

Notes

  • For thicker soup, mash some potatoes before adding sour cream.
  • Substitute Greek yogurt for sour cream if desired.
