Description
A nutritious and flavorful soup packed with lentils and vegetables, enhanced with smoked paprika for a rich taste.
Ingredients
- 1 cup dried lentils, rinsed
- 1 large onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tbsp smoked paprika
- 4 cups vegetable broth
- 2 cups water
- 1 can diced tomatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes.
- Stir in smoked paprika and cook for 1 minute.
- Add lentils, vegetable broth, water, diced tomatoes, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes or until lentils are tender.
- Remove bay leaf before serving.
Notes
- For extra flavor, add a splash of lemon juice before serving.
- Store leftovers in an airtight container for up to 3 days.
