Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb potato gnocchi
  • 2 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned.
  2. Add diced onion and minced garlic. Cook until softened.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in heavy cream and add gnocchi. Cook for 3-4 minutes until gnocchi floats.
  5. Add spinach and cook until wilted.
