Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 celery stalks, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 green onions, sliced (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and celery. Sauté for 5 minutes until softened.
  3. Stir in Cajun seasoning, smoked paprika, and cayenne pepper.
  4. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Use a potato masher or immersion blender to partially blend the soup for a thicker texture.
  6. Stir in heavy cream and simmer for another 5 minutes.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with shredded cheddar cheese and green onions.
