A hearty and flavorful Cajun potato soup with a spicy kick, perfect for cold days or when you crave a comforting meal.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 celery stalks, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, bell pepper, and celery. Sauté for 5 minutes until softened.
- Stir in Cajun seasoning, smoked paprika, and cayenne pepper.
- Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
- Use a potato masher or immersion blender to partially blend the soup for a thicker texture.
- Stir in heavy cream and simmer for another 5 minutes.
- Season with salt and black pepper to taste.
- Serve hot, garnished with shredded cheddar cheese and green onions.
Notes
- For a spicier soup, increase the amount of cayenne pepper.
- Substitute heavy cream with coconut milk for a dairy-free version.
- Store leftovers in an airtight container for up to 3 days.
