Description
Yellow squash pickles are a tangy and crisp treat made from fresh yellow squash, vinegar, and spices. They’re perfect for adding a zesty flavor to sandwiches, salads, or as a side dish.
Ingredients
- 2 lbs yellow squash, sliced
- 1 onion, thinly sliced
- 1 tbsp salt
- 1 cup white vinegar
- 1 cup sugar
- 1 tsp mustard seeds
- 1 tsp celery seeds
- 1/2 tsp turmeric
Instructions
- Combine squash and onion in a bowl. Sprinkle with salt and let sit for 1 hour.
- Rinse and drain the squash and onion.
- In a saucepan, combine vinegar, sugar, mustard seeds, celery seeds, and turmeric. Bring to a boil.
- Add squash and onion to the saucepan. Simmer for 5 minutes.
- Pack into sterilized jars and seal.
Notes
- For a spicier version, add red pepper flakes.
- Let pickles sit for at least 24 hours before eating for best flavor.
- Store in the refrigerator for up to 2 months.
