Description

A hearty and flavorful chili combining chicken, apples, and white cheddar for a unique twist on a classic dish.


Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 apples, peeled and diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) white beans, drained
  • 1 can (4 oz) diced green chilies
  • 3 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded white cheddar cheese
  • 1/4 cup fresh cilantro, chopped (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until no longer pink, about 5-7 minutes. Remove and set aside.
  3. In the same pot, sauté onion and apples until softened, about 5 minutes.
  4. Add garlic, cumin, chili powder, salt, and pepper. Stir for 1 minute.
  5. Pour in chicken broth, white beans, and green chilies. Bring to a simmer.
  6. Return cooked chicken to the pot. Simmer for 15-20 minutes.
  7. Stir in shredded white cheddar cheese until melted.
  8. Garnish with cilantro before serving, if desired.

  • For extra heat, add a pinch of cayenne pepper.
