A hearty and flavorful chili combining chicken, apples, and white cheddar for a unique twist on a classic dish.
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, diced
- 2 apples, peeled and diced
- 3 cloves garlic, minced
- 1 can (15 oz) white beans, drained
- 1 can (4 oz) diced green chilies
- 3 cups chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded white cheddar cheese
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until no longer pink, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté onion and apples until softened, about 5 minutes.
- Add garlic, cumin, chili powder, salt, and pepper. Stir for 1 minute.
- Pour in chicken broth, white beans, and green chilies. Bring to a simmer.
- Return cooked chicken to the pot. Simmer for 15-20 minutes.
- Stir in shredded white cheddar cheese until melted.
- Garnish with cilantro before serving, if desired.
Notes
- Use tart apples like Granny Smith for the best flavor balance.
- For extra heat, add a pinch of cayenne pepper.
- Serve with crusty bread or tortilla chips.
