Description
Delicious sweet potatoes baked twice for a creamy, flavorful side dish.
Ingredients
- 2 large sweet potatoes
- 2 tbsp butter
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
- 1 tbsp brown sugar
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce sweet potatoes with a fork.
- Bake potatoes for 45-50 minutes until tender.
- Cut potatoes in half lengthwise. Scoop out flesh, leaving a thin shell.
- Mash potato flesh with butter, milk, salt, pepper, cinnamon, and brown sugar.
- Spoon mixture back into potato shells.
- Return to oven for 15 minutes until tops are lightly browned.
Notes
- For extra crispiness, broil for 2-3 minutes at the end.
- Can be prepared ahead and refrigerated before final baking.
- Add chopped pecans or marshmallows for variation.
