Description

Delicious sweet potatoes baked twice for a creamy, flavorful side dish.


Ingredients

  • 2 large sweet potatoes
  • 2 tbsp butter
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon
  • 1 tbsp brown sugar


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork.
  3. Bake potatoes for 45-50 minutes until tender.
  4. Cut potatoes in half lengthwise. Scoop out flesh, leaving a thin shell.
  5. Mash potato flesh with butter, milk, salt, pepper, cinnamon, and brown sugar.
  6. Spoon mixture back into potato shells.
  7. Return to oven for 15 minutes until tops are lightly browned.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end.
  • Can be prepared ahead and refrigerated before final baking.
  • Add chopped pecans or marshmallows for variation.
