Description
A refreshing and chilled summer soup made with sweet corn, tomatoes, and cucumbers.
Ingredients
- 4 cups fresh sweet corn kernels
- 2 large tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh basil leaves
- 2 cups cold water
Instructions
- Combine corn, tomatoes, cucumber, bell pepper, onion, and garlic in a blender.
- Add olive oil, vinegar, salt, pepper, and basil.
- Blend until smooth.
- Pour into a bowl and stir in cold water.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with additional corn kernels and basil if desired.
Notes
- Use ripe, sweet corn for best flavor.
- Adjust seasoning to taste.
- Serve chilled for maximum refreshment.
