A moist and flavorful Southern-style sweet potato cake spiced to perfection.
Ingredients
- 2 cups mashed sweet potatoes
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking pan.
- In a large bowl, mix sugar, oil, eggs, and vanilla until smooth.
- Add mashed sweet potatoes and blend well.
- In another bowl, whisk flour, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet mixture, stirring until combined.
- Pour batter into prepared pan and bake for 40-45 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use fresh sweet potatoes for best results.
- Adjust spices to taste.
- Store leftovers in an airtight container for up to 3 days.
