These Southern-Style Honey Butter Cornbread Poppers are crispy, golden, and drizzled with sweet honey butter. A Southern favorite perfect for brunch or entertaining.
Ingredients
1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 cup buttermilk
2 large eggs
1/4 cup melted unsalted butter
1 cup sweet corn kernels (fresh or frozen)
1/2 cup diced red bell pepper
1/2 cup shredded cheddar cheese
1/4 cup honey (for drizzle)
1/4 cup softened unsalted butter
Fresh parsley or cilantro (garnish)
Instructions
1. Preheat oven to 400°F and grease or line a muffin pan.
2. Whisk together dry ingredients in a large bowl.
3. Mix wet ingredients in a separate bowl.
4. Combine wet and dry, stir until just mixed.
5. Fold in corn, bell pepper, and cheese.
6. Scoop batter into muffin cups, filling 3/4 full.
7. Bake for 15–18 minutes until golden and set.
8. Make honey butter by mixing softened butter and honey.
9. Drizzle warm poppers with honey butter.
10. Garnish with herbs and serve warm.
Notes
Make it gluten-free by using a 1:1 GF flour blend. Substitute buttermilk with milk + lemon juice. Freeze leftovers up to 2 months.
