A comforting and easy slow cooker meal with tender chicken, creamy rice, and mixed vegetables.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can (10.5 oz) cream of chicken soup
  • 1.5 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese


Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add rice, mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Stir gently to combine.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  5. Shred chicken with forks and stir in cheddar cheese.
  6. Serve warm.

Notes

  • For a creamier texture, add 1/4 cup of milk.
