A simple and healthy one-pan meal with tender lemon herb chicken and roasted vegetables.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
- Toss chicken and vegetables with the marinade.
- Arrange chicken and vegetables on a sheet pan.
- Bake for 25 minutes or until chicken reaches 165°F (74°C).
- Serve hot.
