Description
A simple and flavorful vegetable side dish with roasted sweet potatoes, garlic, and Parmesan cheese.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, garlic, salt, pepper, and thyme.
- Spread evenly on a baking sheet.
- Roast for 25-30 minutes, stirring halfway, until tender.
- Sprinkle with Parmesan cheese and roast for 3-5 more minutes.
- Serve warm.

- Cut sweet potatoes into even-sized pieces for uniform cooking.
- Fresh herbs can replace dried thyme if available.
- For extra crispiness, broil for 1-2 minutes after adding Parmesan.
