Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp cocoa powder
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/4 cup red food coloring
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 tsp white vinegar


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix oil, egg, food coloring, vanilla, buttermilk, and vinegar.
  4. Combine wet and dry ingredients, stirring until smooth.
  5. Pour batter into cupcake liners, filling each 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting.
