Description
Ranch Garlic Parmesan Chicken Skewers are juicy, flavorful, and easy to make ahead for brunches or dinners. Grilled or baked!
Ingredients
½ cup ranch dressing
¼ cup grated parmesan cheese
2 tablespoons olive oil
3 cloves garlic, minced
1 tsp dried parsley
½ tsp black pepper
½ tsp garlic powder
1 tsp lemon juice (optional)
1½ lbs chicken breasts or thighs, cubed
Wooden or metal skewers
Instructions
1. Mix all marinade ingredients in a bowl
2. Add chicken cubes and toss to coat
3. Marinate for 30 minutes or overnight
4. Preheat grill or grill pan to medium-high
5. Thread chicken onto skewers
6. Grill 3–4 minutes per side, or bake at 400°F for 20–25 mins
7. Serve hot with your favorite sides

You can marinate and skewer chicken a day in advance
Use a thermometer to ensure chicken reaches 165°F
