Delicious cookies combining the flavors of pumpkin and s’mores for a perfect treat.
Ingredients
- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup graham cracker crumbs
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour, cinnamon, baking soda, and salt. Set aside.
- In another bowl, cream butter and sugars. Add egg, vanilla, and pumpkin puree. Mix well.
- Gradually add dry ingredients to wet ingredients. Stir until combined.
- Fold in graham cracker crumbs, marshmallows, and chocolate chips.
- Scoop dough onto baking sheet, spacing 2 inches apart.
- Bake for 12-15 minutes until edges are golden.
- Cool on baking sheet for 5 minutes, then transfer to wire rack.
Notes
- Store in an airtight container for up to 3 days.
- For extra gooey cookies, add more marshmallows.
