Description
A hearty and healthy skillet meal combining lean ground turkey with sweet potatoes.
Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup spinach
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add ground turkey, cook until browned.
- Stir in sweet potatoes and spices.
- Cover and cook for 15 minutes until sweet potatoes are tender.
- Add spinach and cook until wilted.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Substitute kale for spinach if preferred.
