A delicious twist on classic sweet potatoes, combining the flavors of pecan pie for a rich and satisfying side dish.
Ingredients
- 4 medium sweet potatoes
- 1/4 cup butter, softened
- 1/4 cup brown sugar
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 egg, beaten
- 1/2 cup chopped pecans
- 1/4 cup maple syrup
Instructions
- Preheat oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- Let cool slightly, then cut in half lengthwise and scoop out the flesh, leaving a thin layer inside the skins.
- Mash the sweet potato flesh with butter, brown sugar, milk, vanilla, cinnamon, and salt.
- Stir in the beaten egg until well combined.
- Spoon the mixture back into the potato skins.
- Top with chopped pecans and drizzle with maple syrup.
- Bake for another 15-20 minutes until golden and heated through.
Notes
- Use ripe sweet potatoes for the best flavor.
- Adjust sweetness by adding more or less brown sugar.
- For extra crunch, toast the pecans before adding them.
