Ingredients
2 cups all-purpose flour
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, room temperature
½ cup granulated sugar
½ cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup diced fresh peaches
1 tsp ground cinnamon
¼ cup granulated sugar (for cinnamon-sugar topping)
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment
2. Cream butter, granulated sugar, and brown sugar
3. Beat in egg and vanilla until combined
4. Whisk flour, baking soda, and salt in a separate bowl
5. Gradually mix dry into wet ingredients
6. Fold in diced peaches and half the cinnamon
7. Mix remaining cinnamon with ¼ cup sugar
8. Roll dough into balls and coat in cinnamon-sugar
9. Place 2 inches apart and bake 12–14 minutes
10. Cool 5 minutes on tray, then transfer to rack

Freeze dough balls for up to 2 months
