Mini meatloaf muffins are a fun, bite-sized twist on classic meatloaf. Perfect for portion control and quick meals.
Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup ketchup
- 1 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- In a bowl, mix ground beef, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
- Scoop mixture into muffin tin, filling each cup halfway.
- Bake for 20 minutes or until cooked through.
- Let cool slightly before serving.
Notes
- Use lean ground beef for less grease.
- Add diced onions or bell peppers for extra flavor.
- Store leftovers in the fridge for up to 3 days.
