Delicious low calorie pumpkin chocolate chip muffins that are moist and flavorful.
Ingredients
- 1 cup pumpkin puree
- 1/4 cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup dark chocolate chips
Instructions
- Preheat oven to 350°F.
- Mix pumpkin puree, maple syrup, egg, and vanilla in a bowl.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and nutmeg.
- Add dry ingredients to wet ingredients and stir until combined.
- Fold in chocolate chips.
- Pour batter into muffin tin lined with paper cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
Notes
- Use unsweetened pumpkin puree.
- Allow muffins to cool before serving.
- Store in an airtight container for up to 3 days.
