Ingredients
- 4 large orange bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1/2 cup diced onion
- 1/2 cup diced tomatoes
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- Carve faces into the peppers to resemble Jack-o’-Lanterns.
- Heat olive oil in a pan and sauté onions until translucent.
- Add ground beef and cook until browned.
- Stir in cooked rice, tomatoes, garlic powder, salt, and pepper.
- Fill each pepper with the beef mixture.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes until peppers are tender.
- Serve warm and enjoy!
