A moist and flavorful peach cake perfect for summer, combining fresh peaches with a tender crumb.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup milk
- 3 ripe peaches, peeled and sliced
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
- Whisk flour, baking powder, and salt in a separate bowl.
- Alternately add dry ingredients and milk to the butter mixture, mixing until just combined.
- Fold in peach slices gently.
- Pour batter into prepared pan. Bake for 35-40 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes before transferring to a wire rack.
Notes
- Use ripe but firm peaches for best texture.
- Dust with powdered sugar before serving if desired.
- Store leftovers covered at room temperature for up to 2 days.
