Description
A hearty and comforting soup featuring Irish bacon, cabbage, and potatoes. Perfect for a cold day.
Ingredients
- 200g Irish bacon, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and cubed
- 1/2 head cabbage, shredded
- 1 liter chicken or vegetable stock
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add diced bacon and cook until lightly browned.
- Add chopped onion and garlic, sauté until softened.
- Stir in potatoes and cabbage, coating them in the bacon fat.
- Pour in the stock and bring to a boil.
- Reduce heat and simmer for 20-25 minutes until potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot with crusty bread.
Notes
- Use smoked bacon for extra flavor.
- Substitute kale for cabbage if preferred.
- Store leftovers in the fridge for up to 3 days.
