Ingredients
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup granulated sugar
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Line a muffin tin with liners.
- Whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
- In another bowl, mix pumpkin, oil, eggs, and sugar until smooth.
- Combine wet and dry ingredients. Stir until just blended.
- Fill muffin cups halfway with batter.
- Mix cream cheese, powdered sugar, and vanilla. Spoon a dollop onto each muffin.
- Top with remaining batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool before serving.
