Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup granulated sugar
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F. Line a muffin tin with liners.
  2. Whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
  3. In another bowl, mix pumpkin, oil, eggs, and sugar until smooth.
  4. Combine wet and dry ingredients. Stir until just blended.
  5. Fill muffin cups halfway with batter.
  6. Mix cream cheese, powdered sugar, and vanilla. Spoon a dollop onto each muffin.
  7. Top with remaining batter.
