Description

Soft, buttery Homemade Fig Bars made with fresh figs, oats, and a touch of lemon. Perfect for breakfast or snacking.


Ingredients

24 small to medium fresh figs (720g)

1 tbsp lemon zest

2 cups rolled oats (old-fashioned)

2 cups all-purpose flour

3/4 tsp baking powder

1/3 cup brown sugar, packed

1 cup (213g) brown sugar, packed

1/4 tsp kosher salt

1/2 tsp salt

3 tsp vanilla extract

1 cup unsalted butter (cold)


Instructions

1. Trim and simmer figs with lemon zest, brown sugar, and a splash of water until thick and jammy.

2. Preheat oven to 350°F and line an 8×8 baking dish with parchment paper.

3. Combine oats, flour, brown sugar, baking powder, salt, and vanilla.

4. Cut in cold butter until crumbly. Reserve 1 cup for topping.

5. Press crust mixture into pan. Spread fig filling evenly.

6. Top with reserved crumble. Bake 30–35 min until golden.

7. Cool completely before slicing and serving.

Notes

Use dried figs if fresh aren’t available—just rehydrate them before cooking. Store leftovers in the fridge or freezer.
