Ingredients
- 1 cup quinoa, cooked
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp paprika
- 1/2 cup chickpeas, rinsed and drained
- 1/2 cup diced cucumber
- 1/4 cup chopped parsley
- 1/4 cup crumbled feta cheese
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions and let it cool.
- Heat olive oil in a pan over medium heat. Add cumin, turmeric, and paprika, stirring for 30 seconds.
- Mix the spiced oil into the cooked quinoa.
- Add chickpeas, cucumber, parsley, and feta cheese to the quinoa.
- Drizzle with lemon juice and season with salt and pepper.
- Toss gently and serve.

- For a vegan option, omit feta cheese or use a dairy-free alternative.
