Ingredients
8 small corn tortillas
2 cups shredded cooked chicken
1 cup canned corn, drained
1 cup canned black beans, rinsed
1 cup shredded cheddar or Monterey Jack cheese
½ cup salsa or pico de gallo
2 tsp taco seasoning
1 tbsp olive oil
Optional: lettuce, tomatoes, avocado, sour cream, cilantro
Instructions
1. Preheat oven to 400°F. Place tortillas on a baking sheet and brush both sides with olive oil.
2. Bake tortillas for 5–7 minutes per side, flipping halfway, until crisp.
3. Mix shredded chicken with taco seasoning and salsa. Warm in a skillet.
4. Top each crisp tortilla with beans, corn, chicken, and cheese.
5. Bake for 3–5 minutes to melt the cheese.
6. Add toppings like lettuce, avocado, and sour cream. Serve immediately.
