Description
A rich chocolate cake with a sweet cherry topping that bakes into a beautiful upside-down presentation.
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup boiling water
- 2 cups fresh or frozen pitted cherries
- 1/4 cup brown sugar
- 2 tbsp butter
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter in a 9-inch round cake pan. Sprinkle brown sugar evenly over melted butter.
- Arrange cherries in a single layer over the sugar mixture.
- Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
- Add milk, oil, egg, and vanilla. Mix until smooth.
- Gradually stir in boiling water (batter will be thin).
- Pour batter over cherries in the prepared pan.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then invert onto a serving plate.
Notes
- Use fresh cherries when in season for best flavor
- Drain canned cherries well if using as substitute
- Serve warm with vanilla ice cream if desired
