Description

A rich chocolate cake with a sweet cherry topping that bakes into a beautiful upside-down presentation.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh or frozen pitted cherries
  • 1/4 cup brown sugar
  • 2 tbsp butter


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in a 9-inch round cake pan. Sprinkle brown sugar evenly over melted butter.
  3. Arrange cherries in a single layer over the sugar mixture.
  4. Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
  5. Add milk, oil, egg, and vanilla. Mix until smooth.
  6. Gradually stir in boiling water (batter will be thin).
  7. Pour batter over cherries in the prepared pan.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Cool in pan for 10 minutes, then invert onto a serving plate.

Notes

  • Use fresh cherries when in season for best flavor
  • Drain canned cherries well if using as substitute
  • Serve warm with vanilla ice cream if desired
