Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp pumpkin pie spice
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup pumpkin puree
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup cream cheese frosting
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk flour, baking powder, baking soda, salt, and pumpkin pie spice in a bowl.
- Cream butter, brown sugar, and granulated sugar until fluffy. Mix in pumpkin puree, egg, and vanilla.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Scoop dough onto baking sheet, spacing 2 inches apart. Bake for 10-12 minutes.
- Let cookies cool, then pipe cream cheese frosting onto each.

- Use cold butter for best texture.
