Ingredients
- 4 cups diced potatoes
- 2 cups chopped broccoli
- 1 cup shredded cheddar cheese
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Add potatoes, broccoli, onion, garlic, salt, and pepper to the crockpot.
- Pour vegetable broth over the ingredients.
- Cover and cook on low for 6 hours or high for 3 hours.
- Stir in heavy cream and shredded cheddar cheese until melted.
- Serve hot.
Notes
- For a thicker soup, mash some potatoes before adding cream and cheese.
- Add cooked bacon for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
