Description

Crispy Yellow Squash Tots are golden on the outside, tender on the inside, and perfect for dipping. Made with shredded squash, pantry spices, and breadcrumbs—these are a quick and healthy snack or side.


Ingredients

1 ½ cups shredded yellow squash (drained well)

½ cup all-purpose flour

1 cup Panko breadcrumbs

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley (optional for garnish)


Instructions

1. Shred the yellow squash using a box grater. Squeeze out as much moisture as possible using a towel.

2. In a large bowl, mix shredded squash, flour, Panko breadcrumbs, egg, garlic powder, onion powder, paprika, salt, and pepper.

3. Use your hands or a small scoop to shape mixture into small cylindrical tots.

4. Skillet: Heat olive oil in a pan over medium heat. Cook tots for 2–3 minutes per side, until golden and crispy.

5. Air Fryer: Preheat to 375°F. Spray tots with oil and air fry for 10–12 minutes, flipping halfway.

6. Serve hot with your favorite dipping sauces.

Notes

Zucchini can be used instead of yellow squash. Drain thoroughly to avoid soggy texture.

Freeze uncooked tots on a tray, then transfer to bags. Cook from frozen—no thawing needed.

Delicious as a brunch side, appetizer, or snack for kids.
