Ingredients

  • 2 medium yellow squash, sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 2 tablespoons olive oil


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in a bowl.
  3. Dip squash slices in beaten eggs, then coat with breadcrumb mixture.
  4. Place coated squash on a baking sheet lined with parchment paper.
  5. Drizzle with olive oil.
  6. Bake for 20-25 minutes until golden and crispy.
  7. Serve warm.
