Crispy and delicious oven-fried squash made with simple ingredients.
Ingredients
- 2 medium yellow squash, sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in a bowl.
- Dip squash slices in beaten eggs, then coat with breadcrumb mixture.
- Place coated squash on a baking sheet lined with parchment paper.
- Drizzle with olive oil.
- Bake for 20-25 minutes until golden and crispy.
- Serve warm.

- For extra crispiness, flip squash halfway through baking.
- Use panko breadcrumbs for a crunchier texture.
- Add a pinch of cayenne pepper for a spicy kick.
