Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 can (400ml) coconut milk
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp chili flakes
  • 1 lime, juiced
  • 2 cups vegetable broth
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in cumin, coriander, turmeric, and chili flakes.
  4. Add sweet potatoes and cook for 2 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
  7. Blend soup until smooth using an immersion blender.
  8. Stir in coconut milk and lime juice.
  9. Season with salt and pepper.
  10. Serve warm.
