Description

A rich and creamy dish featuring jumbo pasta shells stuffed with garlicky mushrooms and cheese, baked to perfection.


Ingredients

  • 20 jumbo pasta shells
  • 2 cups mushrooms, chopped
  • 3 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp dried thyme


Instructions

  1. Preheat oven to 375°F.
  2. Cook pasta shells according to package instructions, then drain and set aside.
  3. Heat butter and olive oil in a pan over medium heat.
  4. Add mushrooms and garlic, sauté until soft.
  5. Stir in ricotta, half the mozzarella, parmesan, cream, salt, pepper, and thyme.
  6. Stuff each shell with the mixture and place in a baking dish.
  7. Sprinkle remaining mozzarella on top.
  8. Bake for 20 minutes or until cheese melts and turns golden.
