Description
A rich and creamy dish featuring jumbo pasta shells stuffed with garlicky mushrooms and cheese, baked to perfection.
Ingredients
- 20 jumbo pasta shells
- 2 cups mushrooms, chopped
- 3 cloves garlic, minced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp dried thyme
Instructions
- Preheat oven to 375°F.
- Cook pasta shells according to package instructions, then drain and set aside.
- Heat butter and olive oil in a pan over medium heat.
- Add mushrooms and garlic, sauté until soft.
- Stir in ricotta, half the mozzarella, parmesan, cream, salt, pepper, and thyme.
- Stuff each shell with the mixture and place in a baking dish.
- Sprinkle remaining mozzarella on top.
- Bake for 20 minutes or until cheese melts and turns golden.
Notes
- Use fresh mushrooms for best flavor.
- Add spinach for extra greens.
- Store leftovers in an airtight container for up to 3 days.
