Description
Creamy cottage cheese pasta is a high-protein, lighter twist on comfort food that’s easy to make and even easier to love.
Ingredients
8 oz pasta (penne, rotini, or fusilli)
1 tbsp olive oil
1 cup diced onion (120g)
2 cloves garlic, minced
1 lb ground turkey (93/7)
2 cups diced red bell pepper (220g)
1 tsp dried basil
½ tsp red pepper flakes
3 packed cups chopped spinach (90g)
Salt and pepper to taste
2 cups marinara or tomato basil sauce
1 cup low-fat cottage cheese
Fresh basil and grated Parmesan for topping
Instructions
1. Cook pasta until al dente. Reserve ¼ cup of pasta water and drain.
2. Heat olive oil in a skillet. Add onions and cook until soft, then stir in garlic.
3. Add ground turkey and cook until browned.
4. Stir in bell peppers, basil, red pepper flakes, salt, and pepper. Cook for 3–5 minutes.
5. Add spinach and stir until wilted.
6. In a blender, combine cottage cheese and marinara sauce. Blend until smooth.
7. Pour sauce into skillet and stir. Add reserved pasta water as needed.
8. Mix in pasta until coated evenly. Serve topped with fresh basil and Parmesan.
Notes
You can make this ahead and store it in the fridge for up to 4 days.
Blended cottage cheese makes this dish creamy without using heavy cream.
