A rich and flavorful soup with creamy potatoes and bold Cajun spices.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, bell pepper, and celery. Sauté until softened.
- Stir in diced potatoes and Cajun seasoning. Cook for 2 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Blend half of the soup until smooth, then return to the pot.
- Stir in heavy cream and season with salt and pepper. Simmer for 5 more minutes.
- Serve hot with your favorite bread.
Notes
- For extra spice, add a pinch of cayenne pepper.
- Use an immersion blender for easier mixing.
- Store leftovers in an airtight container for up to 3 days.
