Description
A comforting and creamy soup combining broccoli, cheddar cheese, and potatoes for a hearty meal.
Ingredients
- 2 cups broccoli florets
- 2 cups shredded cheddar cheese
- 3 medium potatoes, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add diced potatoes and vegetable broth, bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Add broccoli florets and cook for 5 more minutes.
- Stir in heavy cream and shredded cheddar cheese until melted.
- Season with salt and black pepper.
- Serve hot.
Notes
- For a thicker soup, blend half of it before adding cheese.
- Store leftovers in an airtight container for up to 3 days.
