These Cottage Cheese Pizza Bowls are a cheesy, low-carb twist on classic pizza. Packed with protein and customizable with your favorite toppings, they’re perfect for a quick weeknight dinner or brunch.
Ingredients
1 cup cottage cheese (full-fat or low-fat)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/3 cup low-sugar marinara sauce
1/2 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp red pepper flakes (optional)
12 mini pepperoni slices (or 6 regular, chopped)
Olive oil spray
Instructions
1. Preheat oven to 375°F and grease ramekins or baking dish with olive oil spray.
2. Spoon cottage cheese evenly into the bottom.
3. Add marinara sauce over cottage cheese.
4. Sprinkle oregano, garlic powder, and red pepper flakes (if using).
5. Top with shredded mozzarella and Parmesan cheese.
6. Layer mini pepperoni slices on top.
7. Bake for 12–15 minutes (ramekins) or 18–20 minutes (dish) until cheese is golden and bubbly.
8. Let cool 5 minutes before serving.
Notes
You can substitute ricotta for a creamier version.
To make ahead, assemble and refrigerate unbaked up to 24 hours.
Freeze after baking for up to 2 months.
Add chopped veggies or sausage for variation.
