Description

This Cottage Cheese Egg Bake is creamy, loaded with protein, and perfect for brunch or meal prep. Fluffy eggs and cottage cheese combine with sausage, veggies, and cheddar for a savory breakfast casserole.


Ingredients

12 eggs

1 lb turkey breakfast sausage

1 tsp olive oil

16 oz cottage cheese

1½ cups sharp cheddar cheese

½ sweet onion, diced

2 cloves garlic, minced

1 green bell pepper, diced

1 red bell pepper, diced

¼ tsp salt

¼ tsp black pepper


Instructions

1. Preheat oven to 375°F and grease a 9×13 dish.

2. In a skillet, cook sausage with olive oil until browned.

3. Add onion, garlic, peppers to pan; cook 5 mins until soft.

4. In a bowl, whisk eggs. Stir in cottage cheese, cheddar, salt, and pepper.

5. Add veggies and sausage to the egg mixture and mix well.

6. Pour into prepared dish and bake 35–40 mins or until set.

7. Cool 10 mins before slicing and serving.

Notes

You can prep this the night before and reheat in the morning.

Add hot sauce or salsa for extra flavor.
