A light and fluffy coconut-flavored cake that melts in your mouth.
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup shredded coconut
- 1/2 cup coconut milk
- 1/4 cup butter, softened
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a cake pan.
- Mix flour, sugar, baking powder, and salt in a bowl.
- Add coconut milk, butter, eggs, and vanilla extract. Mix until smooth.
- Fold in shredded coconut.
- Pour batter into the pan and bake for 30-35 minutes.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, toast the shredded coconut before adding.
