Ingredients
- 1 cup pumpkin puree
- 2 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups almond flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix pumpkin puree, eggs, maple syrup, and vanilla in a bowl.
- Add almond flour, baking soda, cinnamon, nutmeg, and salt. Stir well.
- Pour batter into a greased muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.

- For extra flavor, add walnuts or dark chocolate chips.
