Description
Wholesome, high-protein bites made with cottage cheese, oats, and apples. A perfect grab-and-go snack or brunch addition.
Ingredients
1 cup cottage cheese
1 cup rolled or quick oats
½ cup unsweetened applesauce or 1 small grated apple
1 large egg
½ tsp cinnamon
1 tbsp honey or maple syrup (optional)
½ tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and grease or line mini muffin pan.
2. In a large bowl, mix cottage cheese, applesauce, egg, and sweetener.
3. Stir in oats, cinnamon, baking powder, and salt until combined.
4. Fill muffin cups about ¾ full with batter.
5. Bake for 18–22 minutes until set and lightly golden.
6. Cool in pan for 5 minutes, then transfer to a rack.
Notes
Store in fridge for up to 5 days or freeze for 1 month.
Great with yogurt or nut butter!
