Description
Fluffy, protein-packed cinnamon apple cottage cheese bites that make the perfect quick snack or fall brunch treat.
Ingredients
1 cup cottage cheese
1 cup rolled oats
1/2 cup applesauce or 1 small grated apple
1 large egg
1/2 tsp cinnamon
1 tbsp honey or maple syrup (optional)
1/2 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or line with papers.
2. In a large bowl, mix cottage cheese, applesauce, egg, cinnamon, and sweetener.
3. Stir in oats, baking powder, and salt. Let sit 5 minutes to thicken.
4. Spoon mixture into muffin tins, 3/4 full.
5. Bake 18–22 minutes until golden and firm.
6. Cool in pan for 5 mins, then transfer to wire rack.
Notes
You can use Greek yogurt instead of cottage cheese—expect a denser bite.
Quick oats can be used but rolled oats hold texture better.
For a sweeter result, add an extra tablespoon of maple syrup.
Store refrigerated for 4–5 days or freeze for up to 2 months.
