Description
Chocolate Guinness Cake is rich, moist, and deeply flavorful with hints of Guinness stout and cocoa.
Ingredients
2 bottles Guinness beer
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 3/4 cups granulated sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp espresso powder (optional)
1/2 cup vegetable oil
3/4 cup sour cream
2 large eggs
2 tsp pure vanilla extract
1/2 cup buttermilk
For Frosting:
8 oz cream cheese
1/2 cup unsalted butter
2 1/2 cups confectioners’ sugar
1/2 cup cocoa powder
3 tbsp reduced Guinness
Pinch of salt
Instructions
1. Simmer Guinness to reduce to 1 1/4 cups; reserve 3 tbsp for frosting.
2. Preheat oven to 350°F. Grease and line two 9-inch pans.
3. Whisk dry ingredients together.
4. Whisk wet ingredients including cooled Guinness reduction.
5. Combine wet and dry to form a smooth batter.
6. Bake for 30–35 minutes or until a toothpick comes out clean.
7. Cool completely on wire racks.
8. Beat cream cheese and butter for frosting. Add confectioners’ sugar and cocoa powder.
9. Add reduced Guinness and salt to frosting; beat until fluffy.
10. Frost the cake and garnish with gold sprinkles.
Notes
Cake can be stored at room temperature for 2 days or refrigerated for 5 days. Cake freezes well for up to 3 months.
