A flavorful dish combining charred seafood with street corn, perfect for summer grilling.
Ingredients
- 1 lb mixed seafood (shrimp, scallops, squid)
- 4 ears of corn, husked
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 cup cotija cheese, crumbled
- 1 lime, cut into wedges
- 2 tbsp chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Toss seafood with 1 tbsp olive oil, chili powder, smoked paprika, salt, and pepper.
- Brush corn with remaining olive oil and season with salt.
- Grill seafood for 2-3 minutes per side until charred and cooked through.
- Grill corn for 8-10 minutes, turning occasionally.
- Remove seafood and corn from grill.
- Cut corn kernels off the cob.
- Mix corn with seafood, cotija cheese, and cilantro.
- Serve with lime wedges.
